“This is a grand racing tradition celebrating the epic journey of peinguin explorer, Oak Beakman. During the trek, he avoided dangerous crevices and survived by eating only pancakes. Thus, you too must avoid balloons that represent crevices and eat pancakes that represent pancakes to properly recreate his expedition. Oh and Giants get more time for eating pancakes.”

The Great Pancake Slalom is a Heroic Challenge in Skylanders: Giants that is unlocked by Chill. In this challenge, you must finish a race while avoiding balloons, all under 10 seconds. However, there are many pancakes that can grant bonus time.
